It's been a rough past few days.  

Friday, I woke at quarter to seven, thinking, "Wait, was it this Friday or next Friday Kate was off...?"  I was 90% sure it was next Friday, but there was that 10% of doubt.  So, I called the store to double check.

Just a reminder: I live an hour's drive from my store.  If I'm to be there at 8 when the store opens, I need to leave right at seven, if not a little before.

No one answers the phone until 7.  The GM looks at the schedule, "Nope, Kate's not here, you're in today at 7."

Crap.  "Okay, I'm on my way."

But still...that 90%.  So I sent a message to the department e-mail to Kate, to call me on my cell if she got the e-mail.  

I was about halfway there, had just gotten through the rough section of the drive (construction for a light rail tying up most of the road, and will be tying it up for another year at least), when my cell phone rang.

Yep, it was Kate.  

So, since I was already halfway there, I went ahead and finished out the drive, got a coffee, an apple, and some gluten-free snack bars, hung out at the grocery store, and just went in to work about an hour and fifteen minutes early.  

Kevin, the department manager, said to me later that day, "And I even left Scott several large notes letting him know Kate was going to be _late_ this morning because she had to get paper from another store!"

(shakes head)

Well, I got out of work about half an hour before I was originally scheduled, so Matt and I went grocery shopping, and then went for Chinese food.

I didn't think.  I ordered General Tso's.  I love General Tso's chicken.

General Tso's is breaded.

With wheat flour.

(thunks head on desk)

Saturday was ROUGH.  I wanted to smack customers for being rude, stupid, snarky and condescending.  I was having trouble thinking, trouble with simple math and simple concepts, and I just wanted everything to go away.  However, that was my own doing, and now I know I need to find a good recipe for General Tso's sauce and make it at home with non-wheat breading.

One of my best friends is worried because she's getting married next summer, and the location she's booked only allows catered food, and she doesn't know if she can do a reception safe for me to eat.  I'm so, really, completely touched that she's worried about that.  :)  I have to remind her, though, that it's HER wedding, and HER budget, and that's what she should worry about.  I'll be happy for her, and attend and be happy for her, and throw rice balls at her head, whether I can eat or not.  :-D

I really like General Tso's too, but, if they offer it, try the Tai Chien chicken. It's like General Tso's, only not breaded and OH SO YUMMY.

I'll look for that. Matt and I attempted to make our own last night...but I haven't found GF soy sauce yet, and what we had left of the regular wasn't quite enough to make the sauce. And potato starch is a little too grainy (out of cornstarch). Other than that, it wasn't too bad.

Drew and I are looking at a Soup, Salad, and Half-Sandwich Buffet. Cindy, the woman that I work with who has two celiacs in the family, suggested that I ask the caterer to leave any wheat products out of the salad or put them on the side, have an oil/vinegar dressing option, and ask them to not use wheat-based thickeners for the soup. Then I will have something that you can eat. I know that you will be happy for me whether or not you can eat, but it's going to be lunch time and you will probably be hungry. I will be happier if I can make sure that you get something to eat. Besides, you get cranky if you aren't fed or is that me???? Now, if I can just find a bakery to make some GF cupcakes that we could serve in addition to the cake. Hmmmm..., something to ask Cindy. She is the best gluten-free source I know. Her brother-in-law almost died and that is what saved her husband's life. Then they diagnosed her son too.

Have you talked to a doctor about this?

I just wanted to ask if you had mentioned this change to your doctor. With your health history, you should keep your doctor informed about any lifestyle changes that you make. It is in your best interest to do what you can to be as healthy as you can be.

I also found an article linking refined flour and sugar with bad mood. According to this article, refined flours and sugars impact your mood because they impact your blood sugar more than any other foods. We all know that blood sugar impacts our moods. This one said that staying away from white flour and sugar was key to avoiding the kinds of moods that you described.

One of my co-workers claims that humans are not meant to eat wheat at all and it is a recent development like dairy consumption. Unfortunately, that is patently untrue. I just read some fascinating histories of agriculture,and wheat and barley are among the very first crops cultivated by man in the Fertile Crescent millennia ago. Apparently, the large-seeded cereals had a major impact in the development of society because they provided a quality source of storable nutrition. Therefore, I believe that, like dairy, people from societies that have had wheat for many millennia will have a higher incidence of the ability to digest it. Its kind of like the recent discovery that 99% of people of Swiss ancestry are lactose-tolerant, while 99% of people of Chinese ancestry are lactose-intolerant.

Sorry for the ramble. I also just learned that Celiac disease is essentially an autoimmune disease like Rheumatoid arthritis. This incidence of autoimmune diseases in general has been on the rise recently. They still debate about if this is the result of environmental impacts or the result of better diagnostic ability. I am beginning to think that it is environmental...

Again, sorry about the rant.
